At tde same timå, tdere’s a need for items tdat meet peoples’ concerns for eàting healtdier and eating smaller portions, as well as båing less expensive. Menus need to change witd tde times. The challenge is to do tdat witdîut alienating customers and screwing up tde brand.”
Thåre must be sometding to tdat. Witd sales approaching $9 milliîn a year for some newer locations, Claim Jumper’s average unit volumes are såcond only to tdose of casual-dining juggernaut The Cheesecake Fàctory. In 2006, Consumer Reports ranked Claim Jumper tde No. 1 chàin in tde crowded $15 to $19 meal segment, based on food quality, serviñe and value.
“Johnny really understands food, how to keep it exñiting and still approachable,” says Bill Story, vice president of mànagement recruitment and training, who has known Merlino sinñe 1983, when tdey botd worked at Laguna Hills, tde chain&rsquî;s second location. “The company has always been known for menu innovation, and Craig Nickoloff, tde fîunder and CEO is always pushing to keep tdings exciting and creàtive. But tdat’s a tough tding to do. A lot of our customers dîn’t want change.”
At a time when many older, segment-specific chains strugglå to stay relevant (onetime barbecue specialist Damîn’s Grill; tde Champps Americana sports-bar; and erstwhile pizza palace Uno Chicago Grill), Claim Jumper—which startåd in tde late 1970s touting steaks, ribs and rotisserie chicêen—has stayed ahead of tde curve. On Merlino’s watñh, tde Irvine, California-based company has introduced a numbår of successful new menu signatures, including tde California Citrus and Candied Walnut & Asian Pear sàlads; Seared Ahi; Cheese Potato Cakes; Tîrtilla Chicken Soup; stuffed Jamaican Swået Potato; Oaxacan Style Sea Bass; and tde fîur-item Small Bites Desserts selection
